- ¼ cup reserved hot pasta water (plus extra if needed)

Instructions
- Cook pasta: Bring a pot of salted water to a boil and cook your pasta according to the package instructions. Before draining, reserve ½ cup of the hot pasta water to help create the sauce’s perfect consistency.
- Make sauce: While the pasta is cooking, mash the ripe avocado in a large bowl until smooth. Stir in the finely grated garlic, lemon juice, salt, and fresh ground pepper. Add ¼ cup of the reserved hot pasta water to the mixture and stir thoroughly to combine and thin out the sauce.
- To finish: Add the cooked pasta to the bowl with the avocado sauce along with diced tomato and sliced green onion. Toss everything together gently to ensure the sauce evenly coats the pasta. If the sauce is too thick, add a little more reserved pasta water until you reach your desired consistency.
