Instructions

  1. Flatten the dates. Arrange the pitted Medjool dates slightly overlapping in a 3 by 4 pattern on a parchment-lined sheet pan. Cover with another sheet of parchment paper and flatten the dates into a thin, cohesive layer using a rolling pin or the side of a glass jar, ensuring they stick together.
  2. Toast the coconut "phyllo dough." Heat a pan over low heat and toast the unsweetened shredded coconut in avocado oil for about 10 minutes, stirring frequently to prevent burning, until golden brown. Remove from heat and let cool slightly.
  3. Make the filling. In a bowl, combine the toasted coconut with pistachio cream, runny tahini, and a pinch of salt. Mix thoroughly to create a creamy, nutty mixture.
  4. Spread the mixture over dates. Evenly spread the pistachio-coconut filling over the flattened dates layer, making sure to cover the entire surface with no gaps.
  5. Freeze and add chocolate. Freeze the layered dates and filling for at least 10 minutes to set. Then melt the vegan dark chocolate chips and pour over the top, spreading into an even layer covering the entire bark.
