Ingredients
Chia Pudding Base
- 1/4 cup chia seeds
- 1 cup pistachio milk
- 2 tbsp zero-calorie sweetener or sugar
- 1/4 tsp cardamom
Toasted Kataifi
- 2 tsp butter
- 1/4 cup kataifi
Kataifi Pistachio Bites
- 2 tbsp pistachio butter
- 1 tbsp toasted kataifi
Chocolate Layer
- 1/3 cup chocolate
- 1 tsp coconut oil
Instructions
- Prepare the chia pudding: Stir together the chia seeds, pistachio milk, cardamom, and sweetener in a glass bowl. Cover the bowl with a lid and refrigerate for at least 4 hours or overnight to allow the chia seeds to absorb the liquid and form a thick pudding.
- Quick method option: If short on time, blend the chia seeds, pistachio milk, cardamom, and sweetener in a blender for 10 to 20 seconds. Then gently fold in the toasted kataifi using a spatula without blending.
- Toast the kataifi: Melt butter in a pan over medium heat on the stovetop. Add the kataifi to the melted butter and stir continuously with a spatula to toast until golden brown and crispy. Remove from heat and allow to cool.
- Make kataifi pistachio bites: In a bowl, mix the pistachio butter and toasted kataifi. Adjust the quantities until you can shape the mixture into small bite-sized balls. Store in an airtight container until ready to use.
- Coat bites with chocolate: Melt the chocolate and coconut oil in a microwave-safe bowl in 30-second intervals, stirring between each until smooth and completely melted. Dip some of the kataifi pistachio bites into the melted chocolate and toss to coat evenly.
- Assemble the pudding: Divide the chilled chia pudding into two serving dishes. Spoon or pour the melted chocolate over the pudding layer. Place the chocolate-coated kataifi pistachio bites on top along with some of the plain toasted kataifi pistachio bites for added texture.
- Serve: Enjoy immediately or refrigerate for 15 minutes to allow the chocolate layer to harden slightly before serving for a firmer texture.
