  • 1 ounce taco seasoning (1 packet, or 2 tablespoons homemade taco seasoning)
  • ⅔ cup water
  • 1 head iceberg lettuce, chopped into bite-sized pieces
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • ½ cup sliced black olives
  • 15 ounces canned pinto beans, rinsed and drained (1 can)
  • 1 cup diced fresh tomatoes
  • ¼ cup sliced green onions
  • 1 cup shredded cheddar cheese
  • 10 ounces Doritos (Nacho flavored)
  • 16 ounces Catalina salad dressing

Optional Garnish

  • Sour cream
  • Additional green onions


Instructions

  1. Brown the ground beef: In a skillet over medium-high heat, cook the lean ground beef until no pink remains, breaking it apart with a spoon as it cooks. Drain any excess fat to keep the salad lighter.
  2. Season the beef: Stir in the taco seasoning packet and ⅔ cup water into the cooked ground beef. Reduce the heat and simmer, stirring occasionally, until the mixture thickens, about 5 minutes. Remove from heat and set aside to cool.
  3. Prepare the salad base: In a large salad bowl, combine chopped iceberg lettuce, red and green bell peppers, sliced black olives, rinsed pinto beans, diced tomatoes, shredded cheddar cheese, and sliced green onions. Toss gently to mix.
  4. Add the beef: Once the seasoned ground beef has cooled slightly, top the salad mixture evenly with the beef.
  5. Add the Doritos and dressing: Slightly crush the Doritos and sprinkle them generously over the top of the salad. Drizzle the Catalina salad dressing over everything, then toss gently to coat the ingredients evenly.
  6. Garnish and serve: If desired, add sour cream and extra green onions as garnish. Serve the salad immediately to enjoy the fresh crunch of the Doritos.
