Description

This refreshing Dilly White Bean Cucumber Salad combines tender white beans, crisp cucumbers, and spicy radishes, all tossed in a zesty lemon garlic vinaigrette with fresh dill and green onions. It’s a quick, vibrant, and healthy salad perfect for a light lunch or a tasty side dish.

Ingredients

Vinaigrette

  • 1 garlic clove (minced)
  • Juice of 1 small lemon (about 2 tablespoons)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • Black pepper (to taste)

Salad

  • 2 15-ounce cans of white beans (rinsed and drained)
  • 2 Persian cucumbers (thinly sliced) or 1/2 large cucumber
  • 5-7 radishes (cut into matchsticks)
  • 0.75 oz fresh dill (stems removed and finely chopped)
  • 2 green onions (green and white parts thinly sliced)

Instructions

  1. Make the Vinaigrette: In a small bowl, combine the minced garlic, lemon juice, extra virgin olive oil, Dijon mustard, salt, and black pepper. Whisk thoroughly to blend all flavors. Let the mixture sit for about 5 minutes to mellow the raw garlic flavor while you prepare the other ingredients.
  2. Make the Salad: In a large bowl, add the rinsed and drained white beans, thinly sliced cucumbers, radish matchsticks, chopped fresh dill, and sliced green onions. Pour the vinaigrette over the salad ingredients, then toss well until everything is evenly coated. Taste and adjust seasoning with additional salt and pepper if needed.
  3. Serve: Serve the salad immediately for the freshest taste, or refrigerate it for 15 to 30 minutes beforehand to let the flavors meld together beautifully. Leftovers can be stored covered in the refrigerator for up to 5 days.

Notes

  • Use Persian cucumbers for a thin-skinned, less seedy option, or substitute with half of a large cucumber if unavailable.
  • For a spicier bite, add more radishes or a pinch of red pepper flakes to the vinaigrette.
  • This salad keeps well for several days, making it great for meal prepping or ahead-of-time entertaining.
  • Drain and rinse canned beans thoroughly to reduce sodium content and improve flavor.
  • Fresh dill is key to the salad’s signature flavor—avoid dried dill substitutes.
