Instructions

- Prepare the Aromatics: While the cauliflower roasts, chop the remaining ingredients. In a Dutch oven or large heavy-bottom pot over medium heat, warm 1 tablespoon of oil until shimmering. Add the chopped onion and a pinch of salt. Cook, stirring occasionally, until translucent, about 3 to 4 minutes. Stir in the curry paste and lemon zest until combined. If using wine, increase heat to medium-high, add wine, and cook until mostly evaporated, stirring frequently.
- Simmer the Soup: Add half the roasted cauliflower florets along with all the stems to the pot. Pour in the vegetable broth and coconut milk. Bring to a gentle simmer, stirring occasionally. Maintain a gentle simmer for 5 to 10 minutes to meld flavors. Then remove from heat.
- Blend Until Smooth: Let the soup cool slightly before blending. For a creamy texture, puree in batches in a blender until smooth, being careful not to overfill or release steam suddenly. Alternatively, use an immersion blender directly in the pot.
- Season and Serve: Stir in 1 teaspoon rice vinegar and season with salt and pepper to taste. Add more vinegar if needed to balance acidity, up to 3 teaspoons total. Ladle soup into bowls, topping each with the remaining cauliflower florets and optional garnishes like chopped green onions, fresh basil, and red pepper flakes.
