Ingredients
For the Roll
- 1 full size sheet of nori (cut smaller if desired)
- 3/4 cup prepared, seasoned sushi rice
- 2 prepared shrimp tempura
- 3 avocado slices (~1/6th of an avocado)
Toppings and Coating
- Spicy mayo, to drizzle
- 3 tbsp panko bread crumbs
- 2 tsp toasted sesame oil (for toasting bread crumbs)
Instructions
- Toast Panko: Combine the panko bread crumbs and toasted sesame oil in a small skillet over medium to medium-low heat. Cook while stirring frequently for 2-3 minutes or until the panko turns golden brown. Remove from heat and set aside.
- Prepare Nori Sheet: Cover a full sheet of nori in a thin, even layer of seasoned sushi rice, spreading all the way to the edges to ensure good coverage and structure for the roll.
- Position for Rolling: Flip the sheet of nori over so the rice side is face down on a bamboo rolling mat wrapped in plastic wrap. This setup helps with rolling tightly without sticking.
- Add Fillings: Arrange the shrimp tempura and avocado slices in even lines about 1 inch from the edge along the longer side of the nori sheet to ensure the roll seals properly.
- Roll the Sushi: Carefully and tightly roll the sushi using the bamboo mat. Once rolled, place the plastic-wrapped mat over the roll and gently press down to shape the roll uniformly.
- Slice the Roll: Transfer the roll to a cutting board and prepare your sharpest knife. Optionally cover the roll with plastic cling wrap to prevent sticking. Run the knife under water then shake off excess moisture before cutting. Slice the roll into 8 equal pieces using a gentle sawing motion, rinsing the knife blade under water every 2-3 cuts to maintain clean slices.
- Plate and Garnish: Arrange the sushi pieces on a serving dish. Drizzle generously with spicy mayo and sprinkle the toasted panko crumbs on top for a flavorful crunchy finish.
