Instructions

  2. Cool and Smash: Drain the cooked potatoes and let them cool for 5 minutes. Transfer the potatoes to a large sheet pan. Using a potato masher or the bottom of a sturdy cup, gently smash each potato until it is about half an inch thick, taking care not to break them apart entirely.
  3. Prepare Garlic Butter and Brush: In a small bowl, mix the melted butter, oil, minced garlic, and chopped fresh parsley. Brush this flavorful mixture generously over the flattened potatoes. Then, season with salt and freshly ground black pepper according to your taste.
  4. Bake to Crisp: Place the sheet pan into the preheated oven and bake for 45 minutes without flipping, allowing the potatoes to develop a golden-brown, crispy crust on the outside while remaining soft inside.
