Ingredients
Potatoes
- 2 pounds petite gold potatoes, halved
- ½ teaspoon baking soda
- Kosher salt and pepper, to taste
- 2 tablespoons olive oil
Garlic Butter
- 6 tablespoons unsalted butter
- 4 garlic cloves, minced
Fresh Herbs
- ⅔ cup chopped fresh herbs (such as basil, parsley, cilantro, dill, chives, green onions)
Instructions
- Preheat Oven: Preheat the oven to 450 degrees Fahrenheit to prepare for roasting the potatoes.
- Boil Potatoes: Bring a large pot of water to a boil. Add the halved potatoes, baking soda, and a generous amount of kosher salt. Boil until the potatoes are just fork tender, approximately 10 to 12 minutes.
- Drain and Rough Up Potatoes: Drain the potatoes and return them to the pot for 1 minute to allow excess moisture to evaporate. Then transfer them to a large bowl. Drizzle with olive oil, season with salt and pepper, and shake the bowl vigorously until the potatoes develop a pasty coating—this helps create a crispy texture when roasted.
- Roast Potatoes: Spread the potatoes out in a single layer on a baking sheet. Roast for 20 minutes, then shake the pan and flip the potatoes to ensure even browning. Continue roasting for an additional 15 to 20 minutes, or until the potatoes are deeply golden and crispy.
- Prepare Garlic Butter: While the potatoes roast, melt the butter in a saucepan over low heat. Add the minced garlic, then remove the pan from the heat to infuse the butter without burning the garlic.
- Chop Herbs: Chop all fresh herbs and combine them together to be sprinkled on the potatoes later.
- Toss and Serve: Remove the potatoes from the oven and transfer them to a large serving plate. Drizzle the garlic butter evenly over the potatoes. Sprinkle the chopped herbs on top and gently toss to combine. Serve immediately while hot and crispy.
Notes
- Ensure the potatoes are roughly patted and shaken in the bowl after boiling to create a slightly mushy coating; this step is crucial for crispiness.
- Adjust roasting time as needed based on your oven to achieve your preferred level of golden brown and crispiness.
- Feel free to customize the herb mixture according to what fresh herbs you have available.
- Use kosher salt to taste at different stages to enhance flavor without over-salting.
