These Crispy Red Lentil Crackers are a delightful vegan and gluten-free snack made from red lentils and a mix of crunchy seeds. - ⅔ cup dry red lentils
- 1 teaspoon baking powder
- ½ teaspoon sea salt
Seed Mix
- ½ cup mix of seeds (such as sunflower, pumpkin, flax, or sesame seeds)
Liquids
- ¾ cup fresh water (plus more for soaking)
Instructions
- Soak lentils: Rinse red lentils under cold water and drain. Place them in a bowl or jug, cover with 1½ cups of boiling water, and soak for at least 30 minutes to soften.
- Preheat oven & prepare pan: Preheat your oven to 350°F (180°C) and line a large baking sheet with parchment paper to prevent sticking.
- Blend the batter: Drain the soaked lentils and add them to a blender along with baking powder, sea salt, and ¾ cup of fresh water. Blend until the mixture is smooth and batter-like.
- Add seeds: Transfer the blended batter to a bowl and gently stir in the seed mix without blending further. This ensures the seeds retain their crunch.
- First bake & cut: Pour the batter onto the lined baking sheet and spread it as thinly and evenly as possible. Bake for 15 minutes until it starts to set, then remove from oven and cut into squares—about 70 pieces depending on size.
- Bake until crispy: Return the cut crackers to the oven and bake for an additional 30 minutes until golden and firm. Let them cool slightly, then break apart. If some pieces are not crisp enough, bake for a few more minutes to achieve the desired crunch.
