Ingredients

Marinade

  • Pinch of salt (plus extra for serving)
  • ½ cup (120 ml) olive oil

Breading

  • 1 cup (125 grams) all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs

Frying

  • Vegetable oil (enough for frying, about ½ inch depth)


Instructions

  1. Marinate Sardines: In a large bowl, whisk together the olive oil, lemon juice, chopped parsley, dried oregano, minced garlic, and a pinch of salt. Add the cleaned sardines and gently turn them to coat both sides evenly. Cover the bowl with plastic wrap and refrigerate for 30 minutes to allow flavors to infuse.
  2. Prepare for Breading: Remove the sardines one at a time from the marinade, allowing the herbs and garlic to cling to the fish.
  3. Set Up Breading Stations: In three separate shallow bowls or plates, prepare flour, beaten eggs with a pinch of salt, and breadcrumbs respectively.
  4. Bread the Sardines: Dredge each sardine first in flour, shaking off excess, then dip into the beaten eggs, and finally press into the breadcrumbs until evenly coated. Place the breaded sardines on a plate and refrigerate until ready to fry.
  5. Heat Oil: In a large skillet, pour vegetable oil to a depth of about ½ inch (12 mm). Heat over medium heat until the oil reaches about 350°F (175°C). To test, drop a cube of bread into the oil; if it sizzles and floats to the top, it’s ready. Avoid overheating so the oil doesn’t smoke.
  6. Fry Sardines: Fry the sardines in batches to avoid overcrowding, cooking for 2-3 minutes per side or until they turn golden brown and crispy. Use a slotted spoon to remove sardines and place them on paper towels to drain excess oil.
