Description

Crispy Buffalo Cauliflower Bites are a perfect vegetarian appetizer or snack featuring tender cauliflower florets coated in a crunchy panko crust and tossed in spicy buffalo sauce. Baked to golden perfection, these bites deliver all the bold flavors of traditional buffalo wings without the meat, making them ideal for a flavorful, healthier game day or party treat.

Ingredients

Cauliflower Coating

  • 1 head of cauliflower (cut into florets)
  • 1 Tablespoon cornstarch
  • 1 egg
  • 1 Tablespoon water
  • 1 cup panko breadcrumbs
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • 1 tsp kosher salt
  • ¼ tsp freshly ground black pepper

Sauce

  • ½ to ¾ cup buffalo sauce (or to taste)

Optional

  • Blue cheese dressing (for dipping)

Instructions

  1. Preheat and prepare baking sheet: Preheat the oven to 425°F. Place oven-safe cooling racks on a baking sheet or line the sheet with parchment paper. Lightly grease the racks with cooking spray or olive oil to prevent sticking.
  2. Cut cauliflower: Trim and cut the cauliflower into bite-sized florets, making sure they are similar in size for even cooking. Trim the stems to create nugget shapes for easier dipping and eating.
  3. Coat with cornstarch: Toss the cauliflower florets in cornstarch until they are completely coated. This will help the batter stick and create a crispy crust.
  4. Prepare egg wash: In a medium bowl, whisk together the egg and water until fully combined. Set aside.
  5. Prepare panko seasoning: In a separate shallow bowl, mix together panko breadcrumbs, onion powder, garlic powder, kosher salt, and freshly ground black pepper.
  6. Dip cauliflower: Dip each cornstarch-coated cauliflower floret into the egg wash, letting excess drip off. Then transfer it to the panko mixture, tossing until thoroughly coated. Use one hand for egg wash and the other for the panko to avoid clumping.
  7. Arrange on baking sheet: Place the coated cauliflower on the prepared cooling racks lined baking sheet, spacing them out to ensure even crisping. Repeat the dipping for all florets.
  8. Bake: Bake in the preheated oven for 18-23 minutes until the cauliflower is fork-tender and the panko coating is golden brown and crispy.
  9. Toss in buffalo sauce: Transfer the baked cauliflower to a large bowl. Gently toss or brush the bites with buffalo sauce to coat while keeping the panko crust intact. To maintain extra crispiness, you may skip tossing and instead dip the bites as you eat.
  10. Serve: Serve the crispy buffalo cauliflower immediately with blue cheese or ranch dressing and celery sticks if desired for a classic buffalo wing experience.

Notes

  • For extra crispiness, use oven-safe cooling racks on the baking sheet to allow air circulation around the cauliflower.
  • You can adjust the amount of buffalo sauce according to your spice preference.
  • Blue cheese or ranch dressing pairs well as a dip to balance the heat.
  • These bites are best served fresh out of the oven to retain their crisp texture.
  • For a vegan option, substitute the egg with a flax egg and use vegan buffalo sauce and breadcrumbs.
