Ingredients

Chickpeas

  • 1 x 15oz can (about 1½ cups) chickpeas (398ml can in Canada or 400g can in the UK), drained and rinsed

Salad Mix

  • 4 to 5 tablespoons vegan mayonnaise
  • 4 tablespoons diced pickles, sweet or spicy (gherkins in the UK)
  • 4 tablespoons very finely minced onion (red, yellow, white, or green, depending on desired flavor strength)
  • 1 stick celery, diced finely
  • 1 tablespoon Dijon or wholegrain mustard
  • ½ teaspoon fine sea salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon black pepper


Instructions

  1. Drain and rinse the chickpeas: Thoroughly drain the canned chickpeas and rinse them under cold water to remove excess sodium and preserve freshness.
  2. Smash the chickpeas: Place the rinsed chickpeas into a food processor or blender and pulse until they break down into small pieces. Alternatively, transfer them to a mixing bowl and mash with a potato masher or fork until broken up but not pureed.
  3. Add the vegan mayonnaise: Start by mixing 4 tablespoons of vegan mayonnaise into the mashed chickpeas. You can add more later if the mixture needs a creamier consistency.
  4. Combine remaining ingredients: Add diced pickles, finely minced onion, diced celery, Dijon or wholegrain mustard, sea salt, garlic powder, and black pepper. Stir everything together thoroughly until well combined. Adjust seasoning and add extra mayonnaise if desired for creaminess.
  5. Store properly: Transfer the chickpea salad to a sealed container and refrigerate. It will keep fresh for up to 5 days, making it convenient for meal prep and quick lunches.
