Ingredients

Chicken

  • 4 chicken breasts
  • Salt, to taste
  • Black pepper, to taste
  • Paprika, to taste
  • 4 tbsps ghee (or butter)

Vegetables and Sauce

  • 1 medium yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 8 oz mushrooms, sliced
  • 6 oz spinach
  • 1 cup heavy cream
  • 6 oz Parmesan cheese, shredded or grated


Instructions

  1. Prepare and fry chicken: If the chicken breasts are thick, slice them in half horizontally for even cooking. Heat ghee in a deep skillet over medium heat. Place chicken breasts in the skillet and cook for 3-4 minutes without burning. Season with salt, pepper, and paprika while cooking.
  2. Cook the other side of chicken: Flip the chicken and season again with salt, pepper, and paprika cautiously, as Parmesan is salty. Continue cooking for another 3-4 minutes or until chicken is thoroughly cooked with no pink inside.
  3. Remove cooked chicken: Take the chicken breasts out of the skillet, place on a plate, and cover to keep warm.
  4. Sauté vegetables: Using the remaining ghee, add finely chopped onion, minced garlic, and sliced mushrooms to the skillet. Sauté until mushrooms become soft and fragrant.
  5. Add spinach: Stir in the spinach and continue cooking, stirring occasionally, until the spinach wilts down significantly, reducing in volume by about 3 to 4 times.
  6. Make the cream sauce: Pour in the heavy cream and stir well. Allow the mixture to come to a simmer, then add the Parmesan cheese, stirring until melted and combined into a creamy sauce.
  7. Combine chicken with sauce: Return the chicken breasts to the skillet and reduce heat to low. Let everything simmer together for a few minutes to meld the flavors and warm the chicken through before serving.
