Instructions
- Prepare and fry chicken: If the chicken breasts are thick, slice them in half horizontally for even cooking. Heat ghee in a deep skillet over medium heat. Place chicken breasts in the skillet and cook for 3-4 minutes without burning. Season with salt, pepper, and paprika while cooking.
- Cook the other side of chicken: Flip the chicken and season again with salt, pepper, and paprika cautiously, as Parmesan is salty. Continue cooking for another 3-4 minutes or until chicken is thoroughly cooked with no pink inside.
- Remove cooked chicken: Take the chicken breasts out of the skillet, place on a plate, and cover to keep warm.
- Sauté vegetables: Using the remaining ghee, add finely chopped onion, minced garlic, and sliced mushrooms to the skillet. Sauté until mushrooms become soft and fragrant.
- Add spinach: Stir in the spinach and continue cooking, stirring occasionally, until the spinach wilts down significantly, reducing in volume by about 3 to 4 times.
