Description

This Creamy Peanut Zucchini Noodles with Chicken recipe offers a deliciously healthy, low-carb twist on classic peanut noodles. Spiralized zucchini noodles are tossed in a rich and flavorful peanut sauce, combined with tender, sautéed chicken breast, and topped with crunchy peanuts and fresh scallions for added texture and taste. Ready in just 30 minutes, this dish is a perfect quick dinner that's packed with protein and fresh ingredients.

Ingredients

Peanut Sauce

  • 1/2 cup creamy peanut butter
  • 2 tbsp lime juice (about 1/2 lime, juiced)
  • 1 tbsp rice vinegar
  • 1 tbsp fresh ginger, minced
  • 2 tsp Sriracha
  • 1 tsp soy sauce (sub tamari for gluten free)
  • 2 tbsp warm water (plus more if needed)

Chicken and Noodles

  • 1 tbsp olive oil
  • 1 pound boneless skinless chicken breasts, diced
  • 3 zucchini, peeled and spiralized

Garnish

  • 2 scallions, sliced
  • 1/2 cup peanuts, chopped

Instructions

  1. Prepare the Peanut Sauce and Noodles: In a small bowl, combine creamy peanut butter, lime juice, rice vinegar, minced fresh ginger, Sriracha, soy sauce, and warm water. Whisk thoroughly until smooth, adding more water as needed to achieve a creamy consistency. Meanwhile, dice the chicken breasts and spiralize the peeled zucchini. Use a sharp knife or kitchen scissors to cut the zucchini noodles into shorter, bite-sized pieces for easier eating.
  2. Cook the Chicken: Heat olive oil in a large skillet over medium heat. Add the diced chicken and cook for approximately 3-4 minutes per side, or until the chicken is fully cooked through and no longer pink inside. Stir occasionally for even cooking.
  3. Combine Sauce and Noodles: Pour the prepared peanut sauce into the skillet with the cooked chicken. Stir well to coat the chicken evenly with the sauce. Then add the zucchini noodles, stirring occasionally, and cook for an additional 5-7 minutes. The noodles will appear abundant at first but shrink as they cook down and absorb the sauce.
  4. Serve: Remove the skillet from heat. Plate the creamy peanut zucchini noodles with chicken and garnish with sliced scallions and chopped peanuts for added flavor and crunch. Serve immediately while warm.

Notes

  • You can substitute tamari in place of soy sauce to make this dish gluten-free.
  • If you prefer a spicier dish, adjust the amount of Sriracha according to your taste.
  • Peeling the zucchini before spiralizing reduces bitterness and creates a softer noodle texture.
  • For a vegetarian version, omit the chicken and add firm tofu or additional vegetables.
  • Use fresh lime juice for best flavor balance in the peanut sauce.
