Ingredients

Fudgcicle Base

  • ⅔ Cup Chocolate Chips
  • 1 Teaspoon Coconut Oil
  • 1 14 Ounce Package Silken Tofu, drained
  • ¼ Cup Maple Syrup
  • ¼ Cup Powdered Peanut Butter (optional)
  • ¼ Cup Water (if needed)

Topping

  • ⅔ Cup Chocolate Chips
  • 1 Teaspoon Coconut Oil
  • ½ Cup Salted Peanuts, crushed


Instructions

  1. Prepare the melted chocolate: Place the chocolate chips and coconut oil in a small microwave-safe bowl. Microwave in 2 to 3 increments of 30 seconds, stirring in between until smooth and fully melted. Set aside.
  2. Blend fudgcicle mixture: Add the melted chocolate, drained silken tofu, maple syrup, and powdered peanut butter (if using) to a high-speed blender. Blend until completely smooth. If the mixture is too thick, add water gradually and blend again until it reaches a pourable consistency.
  3. Fill molds and freeze: Pour the smooth mixture evenly into six popsicle molds. Insert sticks and transfer the molds to the freezer. Freeze for approximately 4 hours or until completely solid.
  4. Prepare topping: Repeat the melting process by warming the remaining chocolate chips with coconut oil in the microwave until smooth. Meanwhile, chop the salted peanuts and spread them on a plate.
  5. Coat fudgcicles: Remove the frozen fudgcicles from their molds. Dip each fudgcicle into the melted chocolate coating, then immediately roll it in the crushed peanuts. Place on a parchment-lined tray to set.
  6. Serve and store: Enjoy immediately or store leftover fudgcicles in the freezer for up to two months.
