- 2 chicken breasts (cut in half lengthwise to make 4 thinner pieces)

Sauce
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 tablespoon flour
- 3 cloves garlic (minced)
- 1/2 cup chicken broth or dry white wine
- 1 cup heavy/whipping cream
- 1/2 cup freshly grated parmesan cheese
- 1 tablespoon fresh parsley (chopped)
Instructions
- Prepare and Season Chicken: Cut the chicken breasts in half lengthwise to form 4 thinner pieces. Season both sides generously with salt, pepper, and garlic powder.
- Heat the Skillet: Add olive oil and butter to a large skillet and heat over medium-high heat for a few minutes until hot and butter is melted.
- Cook the Chicken: Place the chicken pieces in the hot skillet and cook for about 5-6 minutes on each side, until they are nicely seared and cooked through. Remove the chicken from the skillet and set it on a plate. Tent loosely with foil to keep warm and turn off the heat.
- Make the Sauce Base: Turn the heat back on to medium-high. Sprinkle the flour and minced garlic into the skillet. Stir continuously and cook for about one minute until fragrant but not browned.
- Add Liquid and Reduce: Pour in the chicken broth or dry white wine while whisking to dissolve the flour. Allow the liquid to reduce by half, stirring frequently to prevent lumps.
- Add Cream and Cheese: Stir in the heavy cream and let the sauce gently bubble for a few minutes until it thickens to your desired consistency. Remove from heat and stir in the grated parmesan cheese until melted and fully incorporated.
- Combine Chicken and Sauce: Return the cooked chicken along with any juices from the plate back into the skillet. Spoon the sauce over the chicken. Taste and adjust seasoning with extra salt and pepper if needed. Garnish with freshly chopped parsley before serving.
