Ingredients
Chicken
- 2 large boneless skinless chicken breasts
- Salt & pepper, to taste
- Flour, for dredging
- 1 tablespoon olive oil
- 2 tablespoons butter, divided
Sauce
- 1 whole head garlic, cloves peeled
- 1/2 cup chicken broth or stock
- 1/2 teaspoon lemon juice
- 1/4 teaspoon garlic powder
- 1 cup heavy whipping cream
- Parsley, chopped (optional, for garnish)
Instructions
- Prepare the chicken: Slice each chicken breast in half lengthwise to create four smaller cutlets. Season each cutlet generously with salt and pepper, then dredge them lightly in flour, shaking off the excess.
- Sauté the chicken: Heat 1 tablespoon olive oil and 1 tablespoon butter in a skillet over medium-high heat. When hot, add the chicken cutlets and cook for 4-5 minutes per side until golden brown. Remove the chicken from the pan and set aside.
- Cook the garlic: Lower the heat to medium (or medium-low if using a cast iron pan), add the remaining 1 tablespoon of butter to the skillet, and let it melt. Add the peeled garlic cloves and sauté, stirring frequently, for 3-4 minutes until the garlic turns lightly browned and fragrant.
- Make the sauce base: Pour in the chicken broth, lemon juice, and sprinkle garlic powder into the pan. Allow the mixture to simmer and reduce for about 4 minutes until the liquid slightly thickens and concentrates in flavor.
- Add cream and finish cooking: Stir in the heavy whipping cream, then nestle the chicken cutlets back into the skillet. Simmer for another 5 minutes or until the sauce thickens to a creamy consistency and the chicken is cooked through. Garnish with freshly chopped parsley, if desired, before serving.
Notes
- For extra garlic flavor, you can roast the garlic head before peeling for a sweeter, mellow taste.
- If you prefer a thicker sauce, let it simmer a few minutes longer after adding cream.
- Serve with rice, mashed potatoes, or crusty bread to soak up the delicious sauce.
- Using heavy cream ensures a rich sauce but you can substitute half-and-half for a lighter version.
- Make sure not to overcrowd the pan when sautéing chicken to get a nice golden sear.
