Chicken

  • 2 large boneless skinless chicken breasts
  • Salt & pepper, to taste
  • Flour, for dredging
  • 1 tablespoon olive oil
  • 2 tablespoons butter, divided

Sauce

  • 1 whole head garlic, cloves peeled
  • 1/2 cup chicken broth or stock
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1 cup heavy whipping cream
  • Parsley, chopped (optional, for garnish)


Instructions

  1. Prepare the chicken: Slice each chicken breast in half lengthwise to create four smaller cutlets. Season each cutlet generously with salt and pepper, then dredge them lightly in flour, shaking off the excess.
  2. Sauté the chicken: Heat 1 tablespoon olive oil and 1 tablespoon butter in a skillet over medium-high heat. When hot, add the chicken cutlets and cook for 4-5 minutes per side until golden brown. Remove the chicken from the pan and set aside.
  3. Cook the garlic: Lower the heat to medium (or medium-low if using a cast iron pan), add the remaining 1 tablespoon of butter to the skillet, and let it melt. Add the peeled garlic cloves and sauté, stirring frequently, for 3-4 minutes until the garlic turns lightly browned and fragrant.
  4. Make the sauce base: Pour in the chicken broth, lemon juice, and sprinkle garlic powder into the pan. Allow the mixture to simmer and reduce for about 4 minutes until the liquid slightly thickens and concentrates in flavor.
  5. Add cream and finish cooking: Stir in the heavy whipping cream, then nestle the chicken cutlets back into the skillet. Simmer for another 5 minutes or until the sauce thickens to a creamy consistency and the chicken is cooked through. Garnish with freshly chopped parsley, if desired, before serving.
