- 4 large carrots, chopped
- 1 potato, chopped
- 1 leek (white and light green parts only), sliced
- 3 medium turnips, chopped

Instructions
- Boil the Carrots and Potatoes: Bring a pot of water to a boil. Add the chopped carrots and potatoes and cook for 20-25 minutes, or until the carrots are tender.
- Sauté the Leek: While the vegetables are boiling, slice the leek, discarding the dark green leaf ends and the root end. Heat the butter and olive oil in a skillet over medium heat. Add the leek and cook for 4-5 minutes until softened.
- Add Garlic and Turnips: Stir in the minced garlic and cook for about 30 seconds until fragrant. Add the chopped turnips and cook for an additional 5 minutes, allowing the flavors to meld.
- Combine Vegetables and Season: Add the cooked carrots and potatoes to the skillet with the leek, garlic, and turnips. Cook together for a couple of minutes. Season with salt and black pepper to taste.
- Blend the Soup: Transfer all the vegetables into a blender. Pour in the vegetable broth or water and blend until smooth and creamy.
- Finish the Soup: Pour the blended mixture back into the pot. Stir in the heavy cream, and adjust seasoning with salt and pepper if necessary. Bring the soup to a gentle boil, then immediately remove from heat to prevent curdling of the cream.
- Serve: Ladle the soup into bowls and garnish with chopped parsley for a fresh finish.
