This Breakfast Hash is a comforting one-skillet homestyle dish featuring shredded hash brown potatoes, savory cooked ham, scrambled eggs, bell pepper, onion, cheddar cheese, and fresh parsley.   • 3 1/2 Tbsp butter, divided
  • 1 medium red bell pepper, chopped (1 1/4 cups)
  • 1/2 cup chopped yellow onion
  • 1 (20 oz) pkg. refrigerated shredded hash brown potatoes
  • 8 oz. chopped cooked ham*
  • 6 large eggs, lightly beaten to blend whites and yolks
  • Salt and freshly ground black pepper, to taste
  • 3/4 cup shredded cheddar cheese
  • 2 Tbsp chopped parsley


Instructions

  1. Melt Butter and Sauté Vegetables: Melt 3 tablespoons of butter in a 12-inch cast iron skillet or another heavy skillet over medium-high heat. Add the chopped red bell pepper and yellow onion, and sauté them for about 3 minutes until they begin to soften and release their aromas.
  2. Add Potatoes and Brown: Toss the refrigerated shredded hash brown potatoes into the skillet with the bell pepper and onion mixture. Spread the mixture into an even layer and season with salt and freshly ground black pepper to taste. Let the potatoes cook, stirring only occasionally, until they begin to brown, approximately 6 to 7 minutes.
  3. Incorporate Ham and Continue Cooking: Add the chopped cooked ham to the skillet and cook together with the potatoes until the potatoes become tender, about 3 minutes more. Once cooked, push the potato mixture to one side of the pan to make space for the eggs.
  4. Scramble Eggs: Reduce the heat to low. Melt the remaining 1/2 tablespoon of butter in the empty half of the skillet. Pour the lightly beaten eggs into this space, season with salt and pepper, and cook while scrambling until the eggs are just set and no longer runny.
  5. Combine and Add Cheese: Toss the scrambled eggs together with the potato, ham, and vegetable mixture. Sprinkle the shredded cheddar cheese over the top and toss just a few times to incorporate the cheese and allow it to melt slightly.
  6. Garnish and Serve: Finally, sprinkle chopped fresh parsley over the hash and serve warm. Optionally, offer ketchup or hot sauce on the side for added flavor.

Notes

  • Most ham sold in grocery stores is pre-cooked, so additional cooking is unnecessary. Always check the packaging to confirm. Leftover ham roast or ham steak can also be used.
