- 5 large fresh mint leaves

Chocolate Shell
- 1 cup dark chocolate chips
- 1 tablespoon coconut oil
- ¼ cup crispy puffed quinoa
Instructions
- Prepare the avocado mixture: Remove the pits from the avocados and scoop the flesh into a blender or food processor. Add the solid part of the coconut milk can, fresh mint leaves, pure maple syrup, and juice from half a lime. Blend everything until the mixture is smooth, creamy, and free of any mint leaf pieces.
- Fill the molds and freeze: Evenly spoon the avocado mixture into popsicle molds, pressing the mixture well to ensure they are fully filled. Cover the molds and freeze for at least 2 hours, preferably overnight, to set firmly.
- Melt the chocolate shell ingredients: In a microwave-safe glass container wide and deep enough to dunk the pops, melt dark chocolate chips together with coconut oil. Heat in two 30-second increments, stirring in between until fully melted and smooth.
- Add crispy quinoa to chocolate: Stir the crispy puffed quinoa into the melted chocolate to add a crunchy texture to the shell coating.
- Coat the ice cream bars: Remove the frozen pops from their molds and dip each bar into the melted chocolate mixture up to the stick. Allow excess chocolate to drip off, then place on parchment paper or a plate to harden. For the last pop, if dipping is difficult, spoon the chocolate over it to cover completely.
- Serve or store: Enjoy the bars immediately for a crunchy shell or store them in the freezer for later. Let the bars sit at room temperature a few minutes before eating for easier biteability.
