Ingredients
Vegetables and Herbs
- 1 medium yellow onion (diced, about 1.5 cups)
- 2 medium carrots (chopped, about 1 cup)
- 2 ribs celery (chopped, about ¾ cup)
- 1 pound cremini mushrooms (sliced)
- 4 cloves garlic (minced)
- 1 teaspoon rubbed sage
- 1 teaspoon dried thyme
- ½ teaspoon salt
- ½ teaspoon freshly ground black pepper
- ¼ cup chopped fresh parsley
Liquids and Sauces
- 3 tablespoons extra virgin olive oil
- 1 tablespoon Worcestershire sauce (use a vegan brand if needed)
- 4 cups vegetable broth
- 1 cup water
- 13.5 ounces unsweetened coconut milk
Other Ingredients
- ¼ cup all purpose flour
- 1 cup dry wild rice (rinsed)
Instructions
- Sauté vegetables: Warm olive oil in a large soup pot over medium heat. Add the diced onions, chopped carrots, and celery. Cook for 5 to 7 minutes until the vegetables are softened.
- Cook mushrooms and seasonings: Add the sliced cremini mushrooms, minced garlic, rubbed sage, dried thyme, salt, and freshly ground black pepper to the pot. Stir frequently and cook for another 5 to 7 minutes until most of the liquid released by the mushrooms has evaporated.
- Add Worcestershire sauce: Stir in the Worcestershire sauce and cook for an additional minute to blend the flavors.
- Incorporate flour: Sprinkle the all-purpose flour over the vegetables, stirring to coat everything evenly. Cook for one minute to remove the raw flour taste.
- Add wild rice and liquids: Pour in the rinsed wild rice, vegetable broth, water, and unsweetened coconut milk. Stir to combine, then increase the heat to bring the mixture to a boil.
- Simmer the soup: Once boiling, cover the pot and reduce the heat to maintain a gentle simmer. Cook for 45 to 75 minutes, stirring often, until the wild rice is tender. Cooking time varies depending on the brand of wild rice used.
- Finish and serve: Stir in the chopped fresh parsley, adjust seasoning if needed, then serve the warm soup and enjoy.
