Rice Mixture

  • 2 cups chicken broth

Sweet Potato Mixture

  • 1 tablespoon olive oil
  • 1 cup sweet potato, diced small

Instructions

Reduce the heat to low to maintain a simmer and cover the saucepan with a lid. Let it cook for about 30 minutes or until the rice is tender, following your wild rice blend’s package instructions if they differ.
  2. Prepare the Sweet Potato Mixture: While the rice cooks, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced sweet potatoes and sauté them until tender, approximately 15 minutes. When the potatoes are almost cooked through, add the chopped onions to the skillet and cook until they turn translucent and soft.
  3. Add Cranberries and Pecans: Incorporate 1/3 cup dried cranberries and 1/3 cup chopped pecans into the sweet potato and onion mixture. Continue cooking for 1 to 2 minutes to warm the cranberries and toast the pecans slightly, enhancing their flavors.
  4. Combine Mixtures: Once both components are ready, add the sweet potato mixture into the cooked wild rice. Gently fluff everything together with a fork to evenly distribute the ingredients without mashing the rice.
