Cake
- 3 cups (360g) all-purpose flour
- 2 ½ tsp baking powder
- 1 tsp salt
- 1 cup (226g) unsalted butter (softened)
- 2 cups (396g) granulated sugar
- 4 large eggs
- 2 tsp vanilla extract
- 1 cup (227g) sour cream
- ¼ cup (60ml) milk
- Zest of 3 oranges
- ¼ cup (59ml) fresh squeezed orange juice
- 3 cups fresh or frozen cranberries (do not thaw frozen)
Glaze
- 1 cup powdered sugar
- 1 Tbsp (15ml) orange juice
Instructions
- Prepare the pan: Ensure your 9x13 inch baking pan measures exactly 9x13 inches inside the edges for proper baking. Spray with nonstick cooking spray or line with parchment paper for easy release.
- Make the crumb topping: Combine flour, brown sugar, cinnamon, and salt in a large bowl. Pour in melted butter and mix with a spatula or your hands until sandy with some clumps. Set aside.
- Prepare cranberries: Wash and dry fresh cranberries thoroughly. If using frozen, keep them frozen until ready to use; do not thaw.
- Preheat the oven: Set oven to 350ºF (175ºC) to warm while you prepare the batter.
- Mix dry ingredients for cake: In a small bowl, stir together flour, baking powder, and salt; set aside.
- Cream butter and sugar: In a large mixing bowl, beat softened butter and granulated sugar using an electric mixer on medium-high speed until light and fluffy, about 1-2 minutes.
- Add eggs and vanilla: Beat in eggs one at a time then add vanilla extract, mixing until combined.
- Incorporate flour mixture: Add half of the flour mixture to the wet ingredients and beat on low speed until just combined.
- Add wet ingredients and remaining flour: Mix in sour cream, milk, orange zest, and orange juice, beating for 30 seconds. Then add remaining flour mixture and cranberries, beating on low just until combined. Scrape down the bowl with a spatula to ensure even mixing.
- Assemble first layer: Pour half the cake batter into the prepared pan and spread evenly with a spatula.
- Add crumb topping layer: Sprinkle 3 cups of the crumb topping evenly over the first cake batter layer.
- Top with remaining batter: Carefully add the remaining batter over the crumb layer and spread evenly; expect some crumb movement.
- Add final crumb topping: Sprinkle the remaining 3.5 cups crumb topping over the top. Optionally, add extra orange zest for more citrus aroma.
- Bake with foil cover: Bake for 45 minutes, then cover the pan loosely with aluminum foil to prevent over-browning and bake for an additional 35-45 minutes, or until a toothpick inserted in the center comes out clean.
- Cool the cake: Remove from oven and let the cake cool completely in the pan on a wire rack.
- Prepare glaze: Whisk powdered sugar and orange juice in a small bowl until smooth and pourable.
- Glaze and serve: Drizzle the orange glaze over the cooled cake, slice, and serve.
- Storage: Cover leftovers and store at room temperature for up to 3 days or refrigerate for up to 1 week.
Notes
- Use a 9x13 inch baking pan with exact internal dimensions to ensure proper baking.
- Do not thaw frozen cranberries before adding to batter to prevent color bleeding and sogginess.
- Covering cake with foil partway through baking prevents the top from over-browning while allowing the inside to cook through.
- Optional additional orange zest on top enhances citrus flavor and aroma.
- Store leftovers covered to maintain moisture and freshness.
