Orange Sweet Chili Dipping Sauce

- ¼ cup (60g) water, divided
Crab Rangoons
- 1 (8-ounce) package cream cheese, at room temperature
- 1 cup picked lump crab meat
- 2 medium green onions, thinly sliced
- 1 tablespoon soy sauce
- ½ teaspoon garlic powder
- 35-40 square wonton wrappers
- Vegetable oil, as needed for frying (about 2 inches deep)
Instructions
- Make the sweet chili sauce: In a small pot, combine rice vinegar, sugar, grated orange zest, freshly squeezed orange juice, minced garlic, ¼ cup (60g) water, and red pepper flakes. Bring the mixture to a boil over medium heat, then reduce to a simmer, stirring constantly until the sugar dissolves completely. Let it simmer for about 6 minutes until the liquid reduces slightly.
- Thicken the sauce: In a small bowl, whisk together cornstarch and 1 tablespoon (15g) cold water to create a slurry. Gradually whisk the slurry into the simmering sauce. Continue simmering and stirring for about 4 more minutes until the sauce thickens and becomes glossy. Remove from heat and transfer to a small bowl or jar. Let cool completely. The sauce can be stored in an airtight container in the refrigerator for up to one month.
- Prepare the crab filling: In a medium mixing bowl, combine cream cheese, crab meat, sliced green onions, soy sauce, and garlic powder. Stir well to create a uniform filling.
- Fill the wontons: Working one wonton wrapper at a time, place about one teaspoon of the crab filling in the center. Lightly brush the edges of the wrapper with water. - Fry the crab Rangoons: Working in batches, fry a few Rangoons at a time in the hot oil. Cook until they are golden brown on all sides, approximately 2 minutes. Use a slotted spoon to remove them and drain on paper towels to absorb excess oil.
- Serve: Allow the crab Rangoons to cool for about 5 minutes, then serve them warm alongside the prepared orange sweet chili dipping sauce for maximum flavor contrast and enjoyment.
