Instructions
- Heat the Oil: Pour approximately 3 inches of vegetable oil into a stockpot and heat over medium heat until it reaches 450°F, suitable for deep frying to achieve a crispy texture.
- Prepare the Filling: In the bowl of a stand mixer fitted with a paddle attachment, combine cream cheese, shredded crab, soy sauce, garlic powder, and Worcestershire sauce. Beat on medium speed until the mixture is smooth and well-blended.
- Assemble the Rangoons: Lay the wonton wrappers on a clean flat surface. Spoon 1 ½ to 2 teaspoons of the crab and cream cheese filling into the center of each wrapper. Lightly brush the edges with water to act as glue.
- Seal the Wrappers: Bring two opposing corners of the wrapper together over the filling and pinch to seal. Then fold in the remaining corners and pinch all edges securely to form a tight parcel, ensuring no filling leaks during frying. Repeat for all wrappers and filling.
- Fry the Rangoons: Carefully place 5 to 6 Crab Rangoons into the hot oil. Fry for about 1 minute or until they turn golden brown and crispy. Avoid overcrowding the pot to maintain oil temperature.
- Drain and Serve: Remove the fried Rangoons using a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Repeat frying with the remaining Rangoons. Garnish with chopped chives and serve warm for the best flavor and texture.
