Description

Cottage Cheese Toast offers a versatile and nutritious meal option, blending creamy cottage cheese with a variety of sweet and savory toppings. Whether you prefer the zest of smoked salmon and capers or the sweetness of peanut butter and fresh berries, this recipe provides a quick, delicious, and customizable toast perfect for breakfast or a light snack.

Ingredients

Base Ingredients

  • 1 slice sourdough bread (or crusty bread of choice)
  • 1 Tablespoon unsalted butter (melted)
  • 1/2 cup cottage cheese (whole milk, 2%, or fat free)

Savory Toppings

  • 1/2 avocado (peeled and thinly sliced)
  • 1/4 cup sliced cherry tomatoes
  • 1-2 Tablespoons hot honey (e.g., Mike's hot honey) or chili crunch
  • 1 hard boiled egg (sliced or grated)
  • 1 Tablespoon everything bagel seasoning
  • Chili crunch or hot honey, to taste
  • 1-2 ounces smoked salmon
  • Red onion (thinly sliced or pickled, to taste)
  • 1 Tablespoon capers
  • Fresh dill (to taste)

Sweet Toppings

  • 1-2 Tablespoons creamy peanut butter
  • 1/2 banana (sliced)
  • Honey and cinnamon (to taste)
  • 1 Tablespoon strawberry jam
  • 2-3 fresh strawberries (sliced)
  • 2 teaspoons chia seeds
  • 1-2 Tablespoons creamy almond butter
  • 1/4 cup fresh berries (like raspberries or blueberries)
  • Honey (to taste)

Instructions

  1. Prepare the bread: Preheat your oven to the broil setting. Using a pastry brush, coat the slice of bread evenly with melted unsalted butter. Place the bread on a baking sheet and broil for 4 to 6 minutes until it achieves a golden brown color. Alternatively, you can toast the bread in a skillet over medium heat or simply use a toaster for convenience.
  2. Add cottage cheese: Allow the toast to cool down slightly once toasted. Then spread or dollop 1/2 cup of cottage cheese evenly on the top of the bread, providing a creamy base for your toppings.
  3. Choose and add your toppings: Depending on your preference, add savory toppings like sliced avocado, cherry tomatoes, hot honey or chili crunch, sliced or grated hard boiled egg, everything bagel seasoning, smoked salmon, thinly sliced or pickled red onions, capers, and fresh dill. For a sweet version, spread creamy peanut or almond butter, top with sliced banana, honey and cinnamon, strawberry jam with fresh strawberries, chia seeds, fresh berries, and an extra drizzle of honey if desired.

Notes

  • Use whole milk or low-fat cottage cheese depending on your dietary preferences.
  • The hot honey can be substituted with chili crunch or regular honey based on tolerance for spice.
  • Mix and match savory and sweet toppings for a personalized toast experience.
  • Toast timing may vary depending on your oven or toaster model; keep an eye to prevent burning.
  • Optional garnishes like fresh dill or everything bagel seasoning boost flavor complexity.
  • For vegan alternatives, replace cottage cheese with plant-based yogurt or spreads and substitute butter with vegan butter.
