Description
This Cottage Cheese Alfredo is a creamy, healthier twist on the classic Alfredo sauce, made by blending cottage cheese and milk to create a smooth and rich base. With easy ingredients and a quick cooking process, it offers a delicious low-fat alternative to traditional heavy cream-based Alfredo, perfect for tossing with your favorite pasta for a satisfying meal.
Ingredients
Sauce Ingredients
- 1 cup cottage cheese (see notes)
- 1 cup milk (non-fat recommended)
- 1 tablespoon cornstarch
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup parmesan cheese (freshly grated, divided)
- 1 teaspoon Italian seasoning
To Serve
- 8-10 ounces of pasta of choice
Instructions
- Blend Ingredients: In a blender, combine the cottage cheese, half of the parmesan cheese, and milk. Blend until the mixture is smooth and creamy, ensuring no lumps remain for a velvety sauce.
- Create Slurry: In a small saucepan, whisk together the cornstarch with a small portion of the blended cottage cheese mixture to form a smooth slurry. This step prevents clumping when cooking.
- Cook Sauce: Gradually whisk the remaining blended mixture into the saucepan with the slurry. Place over medium heat and cook for 4-5 minutes, stirring constantly, until the sauce thickens.
- Season the Sauce: Once thickened, remove from heat and add salt, black pepper, and Italian seasoning. Stir well to evenly distribute the flavors.
- Finish with Cheese and Serve: Stir in the remaining parmesan cheese until melted. Toss the sauce through 8-10 ounces of freshly cooked pasta of your choice and serve immediately for a creamy, comforting dish.
Notes
- Use low-fat or non-fat cottage cheese for a lighter sauce, but full-fat cottage cheese can make it richer.
- Freshly grated parmesan cheese provides the best flavor and texture.
- This sauce is best served immediately; it thickens further upon standing.
- Leftover sauce can be stored in the refrigerator for up to 3 days and warmed gently with a splash of milk to regain creaminess.
