Description

This Cookie Butter Cold Brew recipe is a delightful Dunkin' Donuts copycat that combines the rich flavors of cold brew coffee with a sweet, creamy cookie butter foam. Perfect for a refreshing and indulgent iced coffee treat at home, it blends cold brew with brown sugar syrup and a luscious cold foam made from heavy cream, whole milk, and cookie butter extract, topped with optional crushed Biscoff cookies for extra texture and flavor.

Ingredients

Cold Foam

  • 2 tbsp heavy cream
  • 1 tbsp whole milk
  • 1 tbsp brown sugar syrup
  • ½ tsp cookie butter extract

Cold Brew Coffee

  • 1 ½ cups cold brew coffee
  • 1 tbsp brown sugar syrup
  • ice (as needed)
  • crushed Biscoff cookies (optional)

Instructions

  1. Make the cold foam: In a small glass or jar, combine 2 tablespoons of heavy cream, 1 tablespoon of whole milk, 1 tablespoon of brown sugar syrup, and ½ teaspoon of cookie butter extract. Froth the mixture until it becomes frothy and smooth. Set this cold foam aside for later use.
  2. Prepare the cold brew: Fill a tall glass with ice to your preference. Pour 1 ½ cups of cold brew coffee over the ice. Add 1 tablespoon of brown sugar syrup and stir well to combine all the flavors.
  3. Assemble and serve: Spoon the prepared cold foam on top of the sweetened cold brew. Optionally, sprinkle crushed Biscoff cookies over the foam to add a delightful crunch and enhance the cookie butter flavor. Serve immediately and enjoy your homemade Cookie Butter Cold Brew.

Notes

  • Use high-quality cold brew coffee for the best flavor.
  • Adjust the amount of brown sugar syrup to your preferred sweetness.
  • If you don’t have cookie butter extract, you can use a small amount of actual cookie butter blended into the cream mixture.
  • For a lighter option, substitute heavy cream with all milk but the foam will be less creamy.
  • Crushed Biscoff cookies on top are optional but add lovely texture and enhance the cookie butter taste.
