This Cooked Salmon Poke Bowl features tender, seared wild salmon cubes coated in a sweet and savory sauce made from honey, coconut aminos, and spices. Ingredients

For the Sauce and Salmon

  • 2 tablespoons honey
  • 1 teaspoon paprika powder
  • 3 tablespoons coconut oil, separated
  • 1 teaspoon garlic powder
  • 1 teaspoon salt, divided
  • 1/2 teaspoon minced or grated ginger
  • 2 tablespoons coconut aminos (or gluten-free Tamari or Soy sauce)
  • 1.25 pounds wild salmon fillet, skinned and cut into 1-inch cubes (about 566 grams)

For Serving (Optional)

  • 1 large green onion, chopped
  • 1 to 2 large avocados, peeled and sliced
  • 1 to 2 large carrots, peeled and cut into long thin ribbons
  • Sesame seeds


Instructions

  1. Prepare the Sauce: In a bowl, combine honey, coconut aminos, paprika powder, garlic powder, 1/2 teaspoon salt, grated ginger, and 1 tablespoon coconut oil. Stir the mixture well until thoroughly blended and set aside.
  2. Sear the Salmon: Heat 2 tablespoons coconut oil in a large pan over medium-high heat. Add the salmon cubes and sear them for 1 to 2 minutes on each side, or until browned and they release easily from the pan. Season the salmon with the remaining 1/2 teaspoon of salt.
  3. Cook with Sauce: Pour the reserved sauce mixture over the seared salmon in the pan. Cook and toss the salmon gently for another 1 to 2 minutes, allowing the sauce to slightly caramelize and coat the salmon cubes evenly.
  4. Assemble the Bowl: Divide the avocado slices and carrot ribbons between serving bowls. Top with the caramelized salmon bites. Garnish with chopped green onions and sesame seeds as desired. Serve immediately.

  • You can substitute coconut aminos with gluten-free Tamari or regular soy sauce if desired.
