Ingredients

Oats Mixture

  • 1 cup rolled oats
  • 1 tablespoon chia seeds
  • Pinch sea salt
  • 3/4 cup unsweetened, plain almond milk
  • 1/2 cup strong cold brew or brewed coffee
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt

Date Caramel

  • 4 Medjool dates, pitted (the softer the better)
  • Water, as needed (added by 1/2 teaspoon increments)


Instructions

  1. Combine Ingredients: In a medium storage container, add rolled oats, chia seeds, sea salt, almond milk, cold brew coffee, maple syrup, vanilla extract, and a pinch of salt. Mix thoroughly to ensure all ingredients are evenly combined.
  2. Refrigerate: Cover the container and place it in the refrigerator for at least 2 hours, preferably overnight, allowing the oats and chia seeds to absorb the liquids and soften.
  3. Prepare Date Caramel: While the oats soak, place the pitted Medjool dates into a high-speed food processor. Blend on high until the dates form a smooth puree. If necessary, add small amounts of water by 1/2 teaspoon increments to reach the desired caramel-like consistency.
  4. Serve: Before serving, stir the oats mixture and add a splash more almond milk if you prefer a thinner consistency. Serve the oats cold, topped or mixed with the date caramel for added natural sweetness and texture.
