Description

This Coffee Panna Cotta is a silky smooth Italian dessert infused with bold espresso flavor, made creamy and rich with heavy cream, whole milk, and sweetened condensed milk. Ingredients

Gelatin Base

  • 7 grams (2 ½ teaspoons) powdered gelatin (1 envelope)
  • 3 tablespoons cold water

Liquid Mixture

  • 1 ½ cups (333 grams) heavy cream
  • 1 ½ cups (355 grams) whole milk
  • ½ cup plus 3 tablespoons (200 grams) sweetened condensed milk
  • ¼ teaspoon kosher salt
  • 1 ½ teaspoons vanilla extract
  • 4 ½ teaspoons Instant Espresso Powder


Instructions

  1. Bloom the Gelatin: In a small bowl, sprinkle the powdered gelatin over the cold water. Let it sit for 5–10 minutes until fully absorbed and gelatin has bloomed.
  2. Heat the Cream Mixture: In a medium saucepan, combine heavy cream, whole milk, sweetened condensed milk, kosher salt, and vanilla extract. Heat over medium heat, stirring occasionally, until the mixture is hot and smooth and the condensed milk has completely melted. Avoid boiling.
  3. Dissolve Espresso Powder: Whisk in the instant espresso powder until fully dissolved, ensuring the mixture flavors evenly without clumps.
  4. Incorporate Gelatin: Add the bloomed gelatin to the hot mixture. Stir gently and continuously until the gelatin is completely dissolved.
  5. Divide and Cool: Pour the mixture evenly into 5 ramekins or serving dishes. Let them cool slightly at room temperature to avoid condensation.
  6. Chill and Set: Place the ramekins uncovered in the refrigerator and chill for at least 8 hours, or overnight, until fully set and firm.
  7. Serve: Once set, serve the panna cotta directly from the ramekins. Optionally top with salted caramel sauce and whipped cream for added decadence.
