Ingredients

Fruit

  • 3 large apples (Honeycrisp or Fuji), cut into slices
  • 2 cups / 300 g / 10.5 oz green grapes, rinsed and dried
  • 3 kiwis, peeled and sliced
  • 3 mandarin oranges (clementines), peeled and separated
  • 1/2 cup / 85 g / 3 oz pomegranate seeds (from 1 pomegranate)

Dressing

  • 1/4 cup / 60 ml / 2 fl oz freshly squeezed orange juice
  • 1 tbsp honey


Instructions

  1. Cut out apple stars: Slice one apple into 1/8-inch (3 mm) thick slices. Using a small star-shaped cookie cutter, cut out star shapes from the apple slices. Drizzle the cut apple stars with a little orange juice to prevent browning and set aside.
  2. Mix dressing: In a small jug or bowl, whisk together the freshly squeezed orange juice and honey until the mixture is well combined and smooth.
  3. Assemble the fruit: In a large mixing bowl, combine the sliced apples (excluding the star cutouts), green grapes, sliced kiwis, separated mandarin orange segments, and pomegranate seeds.
  4. Add dressing: Pour the honey-orange juice dressing over the mixed fruit. Gently toss everything together to evenly coat the fruit with the dressing, taking care not to bruise or mash the fruit.
