Ingredients
Mint Filling
- ⅓ cup light corn syrup
- 5 tablespoons unsalted butter (softened)
- 1 ½ teaspoons mint extract
- ½ teaspoon salt
- Green gel food coloring (start with a couple drops and add more until desired color is achieved)
- 4 to 5 cups powdered sugar
Chocolate Coating
- 10 ounces chocolate candy coating (such as Ghirardelli Melting Wafers, Almond Bark, Candiquik, etc.)
Instructions
- Prepare the Mint Filling: In a medium-sized bowl, combine the light corn syrup, softened unsalted butter, mint extract, salt, and green gel food coloring. Stir well until all ingredients are fully blended and the color is uniform.
- Add Powdered Sugar: Gradually stir in 1 cup of powdered sugar at a time. Continue mixing until the mixture becomes too stiff to stir comfortably.
- Knead the Dough: Transfer the mixture onto a clean surface and knead it by hand, adding more powdered sugar to prevent sticking. Continue kneading until the dough is firm and no longer sticky.
- Chill the Dough: Roll the dough out between two sheets of parchment paper to an even thickness. Refrigerate for 60 to 90 minutes or until the dough is firm. Alternatively, roll the dough into 1-inch balls, place them on wax or parchment-lined baking sheets, and flatten each ball with a flat-bottomed cup or your hand.
- Cut the Patties: Using a small round cutter, cut the chilled dough into patties of uniform size.
- Melt the Chocolate Coating: Melt the 10 ounces of chocolate candy coating according to the package instructions, ensuring a smooth, glossy finish suitable for dipping.
- Dip the Patties: Using a fork or dipping tool, dip each mint patty into the melted chocolate, tapping off the excess coating. Place each coated patty on wax or parchment paper to set.
- Set the Chocolate: Allow the chocolate coating to firm up completely at room temperature before storing the patties in an airtight container to keep them fresh.
