Description

Rich and creamy homemade chocolate cashew butter made with roasted cashews, cocoa powder, and a touch of powdered sugar. This smooth spread combines the natural nutty flavor of cashews with luscious chocolate for a perfect treat that's great on toast, smoothies, or as a dip.


Ingredients

Nut Butter Base

  • 2 1/2 cups roasted cashews

Flavorings

  • 1/4 cup cocoa powder
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt

Finishing

  • 1 tbsp melted coconut oil


Instructions

  1. Preheat and Roast Cashews: Preheat your oven to 350°F. Spread the cashews evenly on a rimmed baking sheet and roast them for 10 minutes to bring out their nutty flavor. Once done, let them cool for a few minutes before processing.
  2. Blend Cashews: Transfer the roasted cashews into a high-speed blender or food processor. Blend until the cashews become crumbly. Pause occasionally to scrape down the sides of the bowl and blend again. Repeat this process until you achieve a semi-smooth texture.
  3. Add Cocoa and Sugar: Add the cocoa powder and powdered sugar to the cashews. Blend everything together until the mixture becomes smooth and evenly combined.
  4. Incorporate Vanilla and Salt: Pour in the vanilla extract and sea salt. Blend again until these ingredients are fully incorporated into the nut butter.
  5. Adjust Texture with Coconut Oil: The mixture should be smooth but possibly thick. Slowly add the melted coconut oil while blending until you reach your preferred creamy consistency.
  6. Taste and Adjust: Taste the chocolate cashew butter and add additional cocoa powder or powdered sugar if you want a stronger chocolate flavor or more sweetness. Blend briefly after any additions.
  7. Store the Nut Butter: Use a rubber spatula to transfer all the nut butter into an airtight container. Seal well and store at room temperature or in the refrigerator for longer freshness.
