Description

This Chipotle Ranch Grilled Chicken Burrito recipe combines tender grilled chicken breast strips with crunchy tortilla strips, fresh lettuce, diced tomatoes, cheddar cheese, and a flavorful mix of ranch dressing and creamy chipotle sauce. Wrapped in a large flour tortilla and grilled to golden crispiness, this burrito offers a delightful blend of textures and smoky, creamy flavors perfect for a satisfying meal.

Ingredients

Burrito Wraps

  • 8 large 10-inch flour tortillas

Fillings

  • 1/2 head iceberg lettuce (about 4 cups chopped)
  • 1 1/4 cup diced tomatoes (about 3/4 of a beefsteak tomato)
  • 16 oz grilled chicken breast strips
  • 16 oz shredded cheddar cheese (can substitute with Mexican blend or Colby jack cheese)
  • 3 oz crunchy tortilla strips or crushed tortilla chips

Sauces

  • 1/2 cup ranch dressing
  • 1/2 cup Taco Bell Creamy Chipotle Sauce

Instructions

  1. Prepare the Ingredients: Grate the cheddar cheese if not pre-shredded, chop the iceberg lettuce into bite-sized pieces, and dice the tomatoes. Lay all ingredients out and ready for assembly.
  2. Assemble the Burritos: Lay a large flour tortilla flat and top with 1/2 cup shredded cheese, 1/2 cup grilled chicken strips, 1 tablespoon of creamy chipotle sauce, 1 tablespoon of ranch dressing, 1/2 cup chopped lettuce, 2 tablespoons diced tomatoes, and about 1/3 cup crunchy tortilla strips.
  3. Roll the Burrito: Fold in the sides of the tortilla and roll tightly from one end to the other to securely enclose the fillings inside.
  4. Grill the Burrito: Heat a skillet over medium heat. Place the burrito seam side down in the skillet and grill on all sides, turning carefully, until the tortilla is golden brown and crisp, and the fillings are warmed through, approximately 2-3 minutes per side.

Notes

  • Use warmed tortillas for easier rolling to prevent cracking.
  • Substitute grilled chicken with rotisserie chicken for convenience.
  • To make it spicier, add jalapeños or a spicy salsa inside.
  • For a lower fat option, use reduced-fat cheese and light ranch dressing.
  • Can be served with guacamole or sour cream on the side.
  • Ensure the skillet is well-heated before grilling to get a nice crispy crust.
