Instructions

  1. Prepare the bread slices: Slice the sourdough baguette into even slices, optionally cutting each slice in half for smaller portions.
  2. Grill the bread: Brush each bread slice lightly with olive oil and place it on a hot grill or grill pan. Grill until char marks appear and the bread is toasted but still slightly soft inside.
  3. Prepare the chickpea mixture: Drain and rinse the chickpeas thoroughly. Pat them dry with paper towels, allowing some skins to come off, which is acceptable. In a medium bowl, combine the dried chickpeas with finely chopped Kalamata olives, extra-virgin olive oil, 2 tsp lemon juice, lemon zest, fresh thyme leaves, crushed red pepper flakes, and kosher salt to taste. Toss everything gently to combine, adjusting salt as needed.
