Instructions
- Prepare the vegetables: Chop the red, yellow, and green bell peppers, half of the white onion, and jalapeno into thin strips suitable for sautéing.
- Cook the vegetables: Heat a cast iron skillet over medium-high heat and cook the chopped vegetables until they are about 80% cooked through but still slightly crisp, stirring occasionally.
- Add chicken and seasonings: Slice the chicken breasts into thin strips and add them to the skillet with the vegetables. Sprinkle salt, pepper, paprika, chili powder, cayenne, red pepper flakes, Italian seasoning, garlic powder, and onion powder evenly over the mixture. Cook until the chicken is fully cooked and the vegetables are tender.
- Set fajita mixture aside: Remove the fajita mixture from the skillet and set aside to cool slightly while preparing the quesadillas.
- Assemble the quesadilla: Heat a nonstick skillet over medium heat and lightly grease with butter or oil. Place one flour tortilla in the skillet, then evenly sprinkle a layer of shredded cheese on half of the tortilla. Add a scoop of the fajita mixture over the cheese, then top with another layer of cheese.
- Cook the quesadilla: Fold the tortilla over to form a half-moon shape. Cook for about 2 minutes on one side until the bottom is golden brown and the cheese begins to melt. Carefully flip and cook the other side for another 2 minutes until golden brown and the cheese is fully melted.
- Serve: Remove from the skillet and serve immediately with your choice of salsa or sour cream for dipping.
