Instructions

  1. Preheat and prepare pan: Preheat oven to 350℉. Grease a 24-cup mini muffin pan thoroughly with baking spray to prevent sticking. If sticking is a concern, cut two long, thin pieces of parchment paper and crisscross them in each well to ensure easy removal. For best results, use baking spray containing flour.
  2. Melt butter and combine ingredients: In a medium saucepan over medium heat, melt the butter completely. Remove from heat and add neutral oil, granulated sugar, brown sugar, cocoa powder, and chopped dark chocolate.
  3. Heat and stir mixture: Return saucepan to medium heat, stirring constantly until smooth, chocolate is fully melted, and no clumps remain. This step deepens the chocolate flavor by blooming the cocoa powder. Use a spatula or whisk, but be careful not to burn the mixture.
  4. Cool chocolate mixture: Remove the pan from heat and let the mixture cool for 5 to 7 minutes to prevent eggs from cooking when added.
  5. Add eggs and whisk: Once cooled, vigorously whisk in the eggs for 1 to 2 minutes until the batter is smooth and glossy. The mixture may initially look separated but will come together; this whisking also helps create the signature shiny, crackly top.
