Ingredients
Vegetables and Fruit
- 1/2 celeriac head
- 1 cooking apple
- 1 medium carrot
Dressing
- 5 tbsp mayonnaise
- 1 tbsp cider vinegar
- 1 tbsp chopped fresh dill
- 1/2 tsp salt
- 1/8 tsp ground black pepper
Instructions
- Prepare the Produce: Peel the celeriac, cooking apple, and carrot thoroughly to remove any tough outer layers and ensure a clean, fresh taste in the slaw.
- Julienne the Vegetables: Use a julienne peeler or a food processor to cut the celeriac, apple, and carrot into thin matchstick-sized pieces. If these tools are unavailable, carefully slice them thinly with a sharp knife and then cut into long, slender matchsticks.
- Mix the Dressing and Slaw: In a large bowl, combine the mayonnaise, cider vinegar, chopped fresh dill, salt, and ground black pepper. Add the julienned vegetables and fruit to the bowl and mix very well so all ingredients are evenly coated with the dressing.
- Serve: Transfer the slaw to a serving dish and enjoy immediately to retain its crisp, fresh texture and vibrant flavors.
Notes
- For best texture, serve the slaw immediately after mixing to avoid sogginess.
- You can substitute Greek yogurt for mayonnaise for a lighter dressing.
- Use a tart apple variety like Bramley for a balanced sweet-tart flavor.
- Fresh dill really brightens the dish; substitute with fresh parsley if unavailable.
- Adjust seasoning to taste, adding more salt or vinegar if desired.
