Ingredients

Chicken Marinade

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch chunks
  • 1 teaspoon kosher salt
  • 1 teaspoon grated ginger
  • 1 teaspoon minced garlic
  • 1/2 teaspoon garam masala
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon ground turmeric
  • 1 tablespoon fresh lemon juice

For Cooking

  • 3 teaspoons clarified butter (ghee), divided
  • 1 large yellow onion, diced
  • 1 to 2 hot green chili peppers, sliced
  • 6 cups cauliflower rice (fresh or frozen)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon ground turmeric

Garnish

  • 1/4 cup chopped cilantro
  • Lemon wedges, for serving


Instructions

  1. Season the Chicken: In a bowl, combine chicken chunks with 1 teaspoon kosher salt, grated ginger, minced garlic, 1/2 teaspoon garam masala, chili powder, 1/4 teaspoon turmeric, and fresh lemon juice. Mix well and let it marinate briefly while you prepare the cooking area.
  2. Brown the Chicken (First Batch): Heat 1 teaspoon ghee in a large skillet over high heat. Add half of the marinated chicken and cook until browned and cooked through, about 5 minutes, stirring halfway through to ensure even cooking. Remove the cooked chicken from the skillet and set aside.
  3. Brown the Chicken (Second Batch): Add the remaining 1 teaspoon ghee to the skillet and repeat the cooking process with the second half of the chicken until it is browned and fully cooked. Set aside with the first batch.
  4. Sauté the Onions: Add the remaining 2 teaspoons ghee to the skillet and reduce the heat to medium-high. Add the diced onions and cook until they become golden brown and slightly caramelized, about 3 to 4 minutes.
  5. Add Peppers and Cauliflower Rice: Stir in the sliced green chili peppers, cauliflower rice, remaining 1 teaspoon salt, 1/2 teaspoon garam masala, and 1/2 teaspoon turmeric. Mix thoroughly to combine all ingredients.
  6. Cook Cauliflower Rice Mixture: Continue cooking the mixture over medium heat, stirring frequently, until the cauliflower rice is tender and flavors meld together, about 6 minutes.
  7. Combine Chicken and Rice: Return the cooked chicken to the skillet and gently stir to incorporate it into the cauliflower rice mixture, allowing the flavors to blend for a minute or two.
  8. Garnish and Serve: Remove from heat, garnish with chopped cilantro, and serve hot alongside lemon wedges for squeezing over the top to add a fresh citrus brightness.
