Wet Ingredients

  • 1 medium banana (mashed)
  • 2 large eggs

  • 1/4 cup brown sugar (lightly packed)
  • 1 cup shredded zucchini (about 1 small zucchini)
  • 2 cups shredded carrots (about 5-6 medium carrots)

Dry Ingredients

  • 1 cup all purpose flour
  • 1 cup almond flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup unsweetened shredded coconut
  • 1 tbsp chia seeds
  • 2 tbsp hemp seeds


Instructions

  1. Preheat the Oven: Set your oven to 375 degrees Fahrenheit to prepare for baking the muffins.
  2. Prepare Muffin Tins: Line 16 muffin cups with paper liners to prevent sticking and make removal easy.
