Description

A vibrant and nutritious Carrot Cake Smoothie that captures the comforting flavors of carrot cake in a refreshing, creamy beverage. Combining fresh carrot, banana, pineapple, oats, and warming spices, this smoothie is perfect as a wholesome meal or a satisfying snack.

Ingredients

Produce

  • 1 large raw carrot, sliced (or shredded if you don’t have a high-powered blender such as a Vitamix)
  • 1 frozen medium ripe banana
  • ½ cup frozen pineapple chunks

Dairy & Dairy Alternatives

  • ¾ cup light coconut milk (or any milk of your choice), plus more if necessary
  • ¼ cup plain Greek yogurt

Pantry

  • ¼ cup gluten free oats
  • 1 tablespoon pecan butter or almond butter
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • Pinch of nutmeg

Instructions

  1. Prepare Ingredients: Slice or shred the large raw carrot to ensure it blends smoothly. Measure out the frozen banana, frozen pineapple chunks, light coconut milk, Greek yogurt, gluten free oats, pecan or almond butter, vanilla extract, ground cinnamon, and nutmeg to have all components ready for blending.
  2. Blend Smoothie: In a large high-powered blender, add all ingredients and blend on high speed for 1-2 minutes or until the mixture is smooth and well combined. If the smoothie is too thick, add additional coconut milk or preferred milk slowly to reach your desired consistency.
  3. Serve and Enjoy: Pour the smoothie into a glass and serve immediately as a full meal or divide into two servings for a nutritious snack.

Notes

  • Use a high-powered blender to ensure the carrot and oats blend completely for a smooth texture.
  • For a thinner consistency, add more milk gradually.
  • Adjust sweetness by adding a touch of honey or maple syrup if desired, though the banana and pineapple add natural sweetness.
  • This smoothie is gluten free if using gluten free oats and dairy or dairy alternatives accordingly.
  • Can be customized with other nut butters such as cashew or peanut butter.
