Description
This Caramelized Onion Hummus is a rich and flavorful twist on classic hummus, combining the sweetness of slowly caramelized onions with creamy chickpeas and tahini. Perfect as a dip, spread, or snack, it's a delicious way to elevate your appetizer or sandwich game with minimal effort and wholesome ingredients.
Ingredients
Caramelized Onions
- 2 tablespoons butter
- 1 large onion, diced or cut into thin strips
Hummus
- 15 ounces canned chickpeas, drained
- ½ cup caramelized onions (prepared as above or from slow cooker recipe)
- 3 tablespoons tahini
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- ¼ teaspoon kosher salt, adjust to taste
- ⅛ teaspoon freshly ground pepper, adjust to taste
Instructions
- Caramelize the Onions: In a large skillet, melt the butter over medium heat. Add the diced or thinly sliced onion and cook slowly for 25-30 minutes, stirring occasionally, until the onions turn a rich caramel brown color. Remove from heat and let cool. Alternatively, you can caramelize a large batch of onions using a slow cooker and freeze in ½ cup portions for future use.
- Prepare the Hummus: In the bowl of a food processor, combine the drained chickpeas, cooled caramelized onions, tahini, olive oil, and minced garlic. Process the mixture until it reaches a smooth and creamy consistency.
- Season to Taste: Taste the hummus and add kosher salt and freshly ground pepper as desired. Pulse again briefly to incorporate the seasoning evenly.
- Serve: Transfer the hummus to a serving bowl and enjoy immediately with raw vegetables, pita chips, crackers, or use as a flavorful spread on sandwiches and wraps.
- Store: Store any leftovers in an airtight container in the refrigerator for up to 4-5 days.
