Topping

  • ¾ cup all-purpose flour
  • ¾ cup packed brown sugar
  • ½ cup quick-cooking oats

Instructions

  1. Prepare the Crust: Preheat the oven to 350℉ (175℃). In a small bowl, combine 2 cups of flour and ½ cup brown sugar. Cut in the ¾ cup cold butter using a pastry cutter or fork until the mixture becomes crumbly. Press the crumb mixture evenly into the bottom of a well-greased 13x9-inch baking pan. Bake this crust for 15-18 minutes until it is lightly browned and set aside to cool slightly.
  2. Make the Cheesecake Layer: While the crust bakes, in a large mixing bowl, beat the softened cream cheese, ½ cup sugar, and vanilla extract until the mixture is smooth and creamy using an electric mixer. Add the lightly beaten eggs and beat on low speed just until combined. Spread this creamy cheesecake mixture evenly over the baked crust.
