  1. Blanch the orange slices: Place the thinly sliced oranges into a large, wide saucepan and cover with 250 ml (1 cup) of water. Bring to a boil, then simmer for 2 minutes to soften the peel and reduce bitterness. Drain the slices and discard the water. Wipe out the pan to prepare for the syrup.
  2. Prepare the sugar syrup: Add the remaining 500 ml (2 cups) of water and 400 g granulated sugar to the cleaned saucepan. Stir gently with a fork over low heat until the sugar dissolves completely, forming a clear syrup.
  3. Simmer oranges in syrup: Return the orange slices to the pan with the sugar syrup, bring to a gentle simmer. Let them simmer uncovered for 40 to 60 minutes, depending on slice thickness, until the white pith becomes translucent and the slices are tender yet retain their shape.
  4. Dry the candied slices: Place a wire rack over a baking tray lined with parchment or wax paper. Using tongs or a slotted spoon, carefully transfer each orange slice from the syrup and lay them in a single layer on the wire rack. Allow them to cool and set, which can take up to 24 hours for best texture.
  5. Optional decoration: Once dried, optionally sprinkle caster sugar over the slices for extra sparkle and sweetness. These can be stored in an airtight container once completely dry.
