Instructions
- Prepare Tater Tots: If using, cook the frozen tater tots according to the package directions until crispy and golden. Set aside once done.
- Cook Sausage: In a large skillet over medium heat, cook the spicy ground sausage until it is crumbly and fully cooked through. Remove the sausage from the skillet and set aside, leaving any drippings in the pan.
- Scramble Eggs: Using the same skillet, scramble the eggs over medium heat until they begin to set. Near the end of cooking, stir in the salsa and cook until eggs are fully cooked and flavors are combined.
- Combine Filling: In a large mixing bowl, combine the scrambled egg and salsa mixture, cooked sausage, shredded Mexican cheese, and the cooked tater tots. Gently fold together to distribute ingredients evenly.
- Assemble Burritos: Evenly divide the filling among the eight flour tortillas. Fold the ends of each tortilla inwards, then roll tightly to enclose the filling. Wrap each burrito individually in aluminum foil sprayed with non-stick cooking spray to prevent sticking.
- Freeze for Later: Place the wrapped burritos in the freezer for storage until ready to use.
