Rice

- 1 large avocado, diced

Condiments & Garnishes
- Soy sauce (regular or low sodium)
- Wasabi paste
- Spicy mayo (1/4 cup mayonnaise mixed with 1 Tbsp sriracha sauce)
- Pickled sushi ginger (optional)
- Toasted sesame seeds (white or black)
Instructions
- Rinse the Rice: Place the rice in a colander and rinse thoroughly under cold water until the water runs clear to remove excess starch. Drain well.
- Cook the Rice: Transfer the drained rice to a large heavy saucepan, add 2 cups of cold water, and bring to a boil over medium-high heat. Once boiling, reduce the heat to the lowest simmer, cover the pan, and cook until the water is absorbed, about 15 minutes. Remove from heat and let the rice rest covered for another 15 minutes to steam.
- Season the Rice: Transfer the cooked rice to a large bowl and gently break up any clumps. Drizzle 5 tablespoons of sushi vinegar over the rice and use a rice paddle or spatula to slice and fold the vinegar into the rice until combined and the rice is just warm. Cover the rice with a damp kitchen towel and let it cool to room temperature while preparing the toppings.
- Assemble the Bowls: Divide the seasoned sushi rice equally among 4 to 5 bowls. Arrange the chopped imitation crab, sliced cucumber, diced avocado, chopped nori, jalapeño, and chives over the rice in an appealing pattern.
- Add Spicy Mayo and Garnishes: In a small bowl, mix 1/4 cup mayonnaise with 1 tablespoon sriracha sauce to create the spicy mayo. Drizzle this over each bowl, followed by soy sauce to taste and a generous sprinkle of toasted sesame seeds.
