Description

These Caesar Chicken Smash Tacos are a flavorful and quick meal option featuring ground chicken pressed onto tortillas and cooked to a crispy perfection. Seasoned with smoked paprika, garlic powder, and black pepper, the cooked chicken is topped with a creamy Caesar salad, toasted panko breadcrumbs, and grated parmesan cheese, creating a delicious twist on classic tacos that's ready in just 30 minutes.

Ingredients

For the Chicken and Tortillas

  • 8 medium flour tortillas
  • 1 pound ground chicken
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon ground black pepper
  • 2 tablespoons olive oil (divided)

For the Toppings

  • ½ cup panko bread crumbs
  • ½ cup Caesar dressing
  • 2 romaine lettuce hearts (or 1 large head romaine lettuce, chopped)
  • 1 cup grated parmesan cheese

Instructions

  1. Prepare the Chicken on Tortillas: Divide the ground chicken into 8 equal portions and press a thin, even layer onto one side of each flour tortilla, spreading close to the edges to ensure even cooking.
  2. Season the Chicken: Sprinkle smoked paprika, garlic powder, kosher salt, and ground black pepper directly over the chicken layer on each tortilla for a well-balanced flavor.
  3. Preheat the Skillet: Heat a large skillet over medium to medium-high heat until hot, then add 1 tablespoon of olive oil to the pan.
  4. Cook the Chicken Side: Place the tortillas chicken side down in the hot skillet and cook for 2 to 3 minutes, or until the chicken is fully cooked through and has developed a nice, browned crust.
  5. Cook the Tortilla Side: Flip the tortillas and cook the tortilla side for about 30 seconds until it becomes lightly crisp, then remove the tortillas from the pan and set aside.
  6. Toast the Panko Breadcrumbs: Add the remaining 1 tablespoon of olive oil to the skillet and toast the panko breadcrumbs, stirring constantly to avoid burning, until they turn golden brown and crunchy.
  7. Prepare the Caesar Salad: Toss the chopped romaine lettuce with the Caesar dressing until the leaves are evenly coated and flavorful.
  8. Assemble the Tacos: Top each chicken-covered tortilla with a generous spoonful of the Caesar salad, sprinkle with toasted panko breadcrumbs and grated parmesan cheese, then fold the tacos and serve immediately for best texture and flavor.

Notes

  • Use a large non-stick or cast-iron skillet for best cooking results and even browning.
  • You can substitute ground turkey for ground chicken if preferred.
  • For a gluten-free option, swap the flour tortillas for corn tortillas and use gluten-free panko breadcrumbs.
  • Make sure to press the chicken evenly onto the tortillas to ensure uniform cooking.
  • Serve these tacos immediately as the crispy textures may soften if left to sit.
