Ingredients

Beef Tenderloin

  • 2.5 lbs beef tenderloin (whole Filet Mignon)

  • 3 cloves garlic (minced)

Lemon Garlic Aioli

  • 1/4 cup light mayo
  • 1 clove garlic (minced)
  • 1 tsp fresh chives (chopped)
  • 2 tsp olive oil
  • 1/4 tsp kosher salt
  • Zest and juice of 1 lemon


Instructions

  1. Prepare the Beef: Remove the beef from the refrigerator and allow it to come to room temperature for 30 minutes to 1 hour to ensure even cooking.
  2. Trim the Tenderloin: Trim off all fat from the beef. Choose a roast initially weighing 2.75-3 lbs before trimming to achieve the final desired size.
